Preparation Time: 10 minutes

Ingredients

50g (2oz) whole blanched marcano almonds
4 ripe peaches
50g (2oz) baby leaf and herb salad
8 slices Serrano ham
150g (5oz) Frans Hals goat’s cheese, roughly crumbled
Juice of ½ lemon
2 tbsp olive oil

Method

  1. Roughly chop the almonds, then lightly toast in a dry frying pan over a moderate heat.
  2. Cut each peach into 8 wedges. Divide the peaches and salad leaves between 4 plates. Arrange 2 slices of ham over the top of each salad and divide the Frans Hals goat’s cheese between the plates.
  3. Whisk together the lemon juice and olive oil and drizzle over the top of each salad. Serve immediately.

Cook's Tip: You could alternatively use nectarines instead of peaches, or try other dried hams such as Italian Parma ham.

Wine Suggestion: We would suggest accompanying this dish with a crisp dry white wine such as Spanish Rueda.
