Classic Carpaccio with fennel and shavings of Rembrandt

Serves 6

Preparation Time: 20 minutes, plus 1 hour chilling time
Cooking time: 5 minutes

Ingredients


3 tbsp freshly chopped rosemary
Salt and freshly ground black pepper
1 tsp dried oregano
550g (1lb 2oz) beef fillet
1 head fennel, thinly sliced
75g (3oz) watercress
100g (3 ½ oz) Rembrandt cheese
30ml (2 tbsp) olive oil
juice of 1 lemon

Method

  1. Mix together the rosemary, oregano, salt and black pepper on a plate. Roll and press the mixture onto the beef until it is evenly coated.
  2. Heat a little olive oil in a heavy based frying pan and when smoking, sear the meat on all sides until brown and slightly crisp.
  3. Remove from the pan, wrap in cling film and place on a plate in the fridge for 1 hour, or the freezer for 30 minutes. (This makes it easier to carve)
  4. Using a very sharp knife, unwrap the beef and cut into thin slices. Place the slices between 2 sheets of baking paper and roll with a rolling pin until almost transparent. Gently lift off the paper and place on a plate. Arrange the thinly sliced fennel and watercress over the beef.
  5. Using a peeler, thinly shave the Rembrandt cheese and scatter over the top. Whisk together the lemon juice with the oil and drizzle over the top. Serve immediately with freshly ground black pepper.

Cook's Tips

  • The beef can be prepared in advance and when your guests arrive the dish can be assembled at the last minute.
  • To ensure wafer thin slices of fennel, you could use a mandolin to slice it
  • You could also use a Vincent cheese as an alternative to Rembrandt in this dish

Wine Suggestion: We would suggest drinking a full bodied red wine, such as a Bordeaux Merlot
