Wild rice, chicken and fruity mango salad

Ingredients


175g wild and long grain rice
2 boneless skinless chicken breasts
1 red onion sliced
1 mango, peeled, stoned and cut into cubes
125g Vermeer cheese, cut into thin strips
Grated zest and juice of 1 lime
1 tbsp olive oil
3 tbsp freshly chopped coriander

Method

  1. Cook the rice, in lightly salted boiling water, according to pack instructions. Drain and rinse in cold water and leave to drain.
  2. Meanwhile rub the chicken breasts with a little olive oil and season with salt and freshly ground black pepper. Cook in a griddle pan, over a medium heat for 7-8 minutes each side or until cooked through.
  3. Mix the rice with the red onion, mango, Vermeer cheese and coriander together in a bowl with the cheese. Cut the chicken into strips and toss in to the salad.
  4. In a small bowl whisk together the lime rind and juice with the oil. Pour over the salad, toss gently and serve immediately.

Cook's Tips

  • To prepare the mango use a sharp knife and halve the mango either side of the flat stone. Cut away the skin, and then cut the flesh into cubes.
  • You can alternatively use Vincent cheese with this dish

Wine Suggestion: We would suggest accompanying this dish with a fruity aromatic wine, such as a Riesling
