Tasty juicy lamb sliders topped with delicate Vermeer cheese and served with fresh baby leaf spinach. Perfect for a summer BBQ, or under the grill all year round.

Ingredients


2 red onions
400g (14oz) minced lamb meat
2 tbsp mustard
2 tbsp fresh thyme
12 small slices Vermer cheese
12 mini or 4 classic 'hamburger' buns
75g (3oz) fresh baby leaf spinach

Method

  1. Clean the onions; chop 1 onion and cut the other one in small rings.
  2. Mix the minced meat with the chopped onion, the mustard and thyme and season to taste with pepper and salt.
  3. Form (with wet hands) 12 mini hamburgers.
  4. Grill the lamb burgers on the BBQ or on a hot grill, approx. 5 minutes on each side. When you turn the burgers, put 1 slice cheese on top of the burger and let it melt.
  5. Open the buns and toast them on the BBQ or on a hot grill.
  6. Clean and dry the spinach.
  7. Top a toasted bun (if you like you can spread some mustard on the buns) with some spinach and put a mini lamb burger on top, garnish with the onion rings.
  8. Serve 3 mini lamb burgers per person.
