Rich Mediterranean Lasagne

Ingredients


1 Eggplant
1 zucchini
2 red peppers
4tbsp olive oil
150g (5oz) cooked ham
1 bunch basil
300ml (1/2pnt) tomato sauce (home or readymade)
8 precooked lasagna leaves
100g (3 ½ oz) Vincent cheese

Method

  1. Clean and cut the eggplant, zucchini and red pepper in long slices. Cut the left over vegetable pieces in small cubes.
  2. Preheat the oven to 220°C, 425°F, gas mark 7.
  3. Mix all the vegetables on a well-oiled baking sheet with the olive oil and season to taste with pepper and salt. Roast the vegetables approx. 10 minutes in the hot oven.
  4. Bring a royal amount of salted water to a boil.
  5. Cut the cooked ham in small cubes. Chop ½ the basil coarsely.
  6. Mix the roasted vegetable cubes with the tomato sauce and bring to a soft boil. Add the cooked ham cubes and the chopped basil. Season to taste with pepper and salt.
  7. Cook the lasagna leaves 2 minutes in the boiling water and drain.
  8. Divide 4 lasagna leaves over 4 (oven resistant) plates. Divide the roasted vegetable slices and the tomato sauce over the lasagna and cover with the remaining lasagna leaves.
  9. Grate the Vincent cheese over the lasagna and let the cheese melt in the hot oven.
  10. Sprinkle with the remaining basil leaves and if you like grate some extra Vincent cheese over the lasagna. Serve hot.
