Sweet filo wrapped figs with Vincent cheese

Ingredients


4 fresh figs
150g (5oz) Dutch Vincent cheese, cut into 3.5cm (1½ ") squares
16 x 12cm (5") squares filo pastry
30ml (2tbsp) oil, for brushing

For the chilli relish:

250g (8oz) ripe tomatoes
1 red chili, deseeded and roughly chopped
2 cloves garlic, peeled
150g (5oz) caster sugar
50ml (2floz) red wine vinegar

Method

  1. To make the relish, place half the tomatoes in a food processor with the chili and garlic and blend until smooth. Dice the remaining tomatoes and place in a saucepan, with any juice and the blended tomatoes. Stir in the sugar and vinegar. Bring to the boil over a low heat, stirring continuously until the sugar has dissolved. Simmer for 20-25 minutes, until thick, stirring occasionally. Leave to cool.
  2. Preheat the oven to 190ºC, 375ºF,Gas Mark 5. Cut each fig into quarters. Lay out 1 sheet of the filo pastry, then brush with a little oil. Place another sheet of pastry on top and brush with a little more oil. Place a piece of Vincent cheese in the middle of the pastry and place a fig, standing upright on top so the stem will stand proud of the pastry.
  3. Draw up the sides of the pastry to encase the fig and cheese to make a parcel. Repeat until all the figs and cheese have been used up. Brush with oil and cook in the oven for 10 minutes until golden.
  4. Serve 2-3 parcels per person with the relish

Cooks tip: You can also try Vermeer cheese with this dish as it works well with the tangy chilli relish and sweet figs.

Wine Suggestion: We would suggest accompanying this starter with a small glass of sparkling wine, such as Prosecco or Italian Moscato d'Asti.
